Celiac Sprue Diets

Celiac disease causes the finger-like projections on the interior surface of the small intestine to shorten and collapse to the point of losing the absorptive abilities. People who have this condition can experience a broad variety of symptoms capable of making life uncomfortable. Symptoms include muscular weakness, chronic diarrhea, excessive gas and abdominal bloating, stomach cramps, achy bones, uncontrollable weight loss, mental confusion, ringing in the ears, headaches, and even dermatitis. Left untreated, the disease can lead to even more conditions including anemia, cirrhosis of the liver, diabetes, brittle bones, and increased risks of intestinal cancer.

Become a Gluten Detective

People with celiac must learn to avoid gluten and this means avoiding not just gluten's most obvious sources such as cereals, baked goods, pastas, and breads, but also reading the ingredients labels of all processed foods and occasionally even checking with a food's manufacturer.
